Backing up large file system

Post Backing up large file system 
I’ve got a large (~16 TB) file server that I want to back up onto a ~40TB RAID array connected to
the fileserver via fiber channel (so there is no backup traffic on our network).

I need to ease into the backups – I don’t want to try to back up the whole file system at once because
everything will grind to a stop trying to move that much data. I want to distribute the backups over 4 successive weekends,
doing about 5Tb each time.

How do I set up the configuration file(s) so I can start the backup process one Friday and turn on the subsequent
sections every Friday until everything is running. If I turn I on now with the full backups on succeeding Fridays with incremental backups
on other days those incrementals will all get promoted to full on the first night it tries to backup.

Any suggestions would be appreciated.

Ok, I've never done stuff at that size. Just as a warning to read on Wink.

I need to ease into the backups - I don't want to try to back up the
whole file system at once because everything will grind to a stop
trying to move that much data. I want to distribute the backups over
4 successive weekends, doing about 5Tb each time.

First thought, won't it grind with 5TB also, just for 1/3 of the time for a
full run?
Second thought, if you limit backup bandwidth, you should be able to limit
effects. If it can't be done on Bacula's level, qos'ing stuff on network
level should yield the same effect.
If the fs to backup can deliver n mb/s, then limiting Bacula's slot to
let's say n/5 mb/s should minimize the effect on normal operations.
