Hello Rick,
The MDBDATA folder is needed to do a restore of Exchange mailboxes. You didn't mention if you use the Exchange agent or not. This is the only way to get the Exchange database's when they are in use (hot), outside of downing the services and picking them up flat file.
Alot depends on the version of Exchange that you are using.
