I'm running 11.5.0, and when the client has something going on...like trying to backup, I can't seem to find out what the progress is. When I try "Show Status" it just says it is busy...not too user-friendly. Is there a way to require it to give up some information?

Pls mention what information you need to know when the backup is going on.

One thing you can try in from the backup server.
Right click on the backup job from the job status and then click on properties and then you can get the required information.

All I get when I try to Show Status when something is going on is a message box that says something is already running. IOW, I would like any information, such as what (backup, connecting to the server, etc.) process is happening and what progress is being made with that.
